About the Company


Kai Corporation has been Japan's premier blade producer for more than 90 years, yet their tradition of fine blade manufacturing goes back even further. Kai's factories are located in Seki city, Japan's famous samurai sword making center, where the bladesmiths of Seki city have been making some of the world's finest cutlery for more than 700 years. Working with today's technology, many of the descendants of those blade smiths continue that tradition of excellence at Kai.

 

Shun Knives and cutlery tools have experienced tremendous growth over the past 4 years and feature many innovative design improvements and unique features. Shun knives used to be marketed under the Kershaw brand but have recently abandoned that brand name and have replaced it with the Shun name only. Under this brand you will find several different models with different styling.

Shun Classic

The Shun Classic knife by Kershaw line features a layered steel construction that allows for a razor-sharp, hard knife edge while keeping the toughness of a traditional knife. As well, the Damascus-look finish gives a varied texture to the blade that keeps food from sticking while you cut. These knives also feature a PakkaWood D-shaped ergonomic handle that locks into your hand while you work. The combination of features in Shun Classic Knives by Kershaw provide a premium knife that is desired by professionals everywhere.

 

Shun Stainless

Shun Stainless knives by Kershaw feature the same blades as the Classic line: hardened steel with a softer outer layer that gives you beautiful looks and outstanding performance. The difference is the handles - stainless steel instead of ebony PakkaWood. The Shun Stainless by Kershaw knife line is an elegant statement in any kitchen.

 

Shun Pro

Shun Pro Series Knives by Kershaw are designed in a style preferred by professional Japanese chefs: a one-sided, beveled edge with a hollow-ground back. The single-bevel design produces an easy-to-maintain, incredibly sharp edge. The hollow-ground back creates an air pocket between the blade and the food, keeping the food from sticking to the blade when cutting. Each Shun Pro Series knife feature the same high-qualityVG-10 clad blades found in all Shun knives.
