Jamaican Jerk Seasoning

 

Flavor like a five-year-old on a caffeine binge.  The nuttiness of allspice, cloves, and nutmeg accentuated with chili heat and garlic.  Mix this blend into a paste with garlic cloves and olive oil, then coat your meat and let it rest.  Essential summer attire for pork and chicken on the grill.  In the winter, pan sear and bake.  Serve with seasonal fruits or chutneys.

 

Ingredients: allspice, chilies, chives, cinnamon, cloves, garlic, ginger, nutmeg, onion, sea salt, tellicherry and other peppers, thyme.
